Step 01
Salt and pepper the chicken on both sides and set aside.

Heat a sauce pan on medium heat.

Add 2 tbsp of olive oil or oil of your choice.

Cook the chicken on both sides until slightly brown and cooked through 5-6 minutes depending on the thickness of the chicken.
Step 05
Remove from heat and set aside.
Step 06
Over medium heat add two more table spoons of olive oil, shallots, garlic, curry leaves, turmeric, salt and pepper, coconut until shallots are translucent.
Step 07
Then, add the sliced mushroom to the pan, reduce the heat and cook for 3-5 minutes.
Step 08
Then add the coconut cream diluted with the water, sir well to combine all the ingredients.
Step 09
Taste for salt and pepper.
Step 10
Add juice of ½ lemon stir well.
Step 11
While stirring, and the chicken back in to the pan with its juices.
Step 12
Coat the chicken well with the mushroom sauce.
